Gluten free and healthy.


Well... This girl is officially free of gluten.  Its hard.... way hard. I cant eat anything I like to, its hard to find restaurants to eat at, I miss soft fluffy bread, mac n cheese, and tostinos pizza. Gluten free food is hard and tasteless... I am getting use to not being able to eat much, but I still have my days when I walk down the isle and see all this fabulous food, and look down at my dinky flavorless rice food and get a little down.  Utah has so many things gluten free but here in the south east there isn't much for me to pick from.  Walmart has 1/8 of an isle for me to pick from... I've learned that most of what I am eating is made from rice... which explains the lack of softness and flavor. My bread is hard, and the mac n cheese is terrible. I just want some Kraft mac n cheese...
With that being said... I am actually much happier being gluten free, I've gotten thinner, the rashes on my arms went away, my face cleared up, my body digests normal, and I don't have upset stomachs anymore.  I am so much happier feeling healthy and clean. Yea I miss good tasting food, and gluten free is so much more expensive. But things are much better this way. I have a very supportive husband who leaves restaurants if they don't have gluten free, or if they do but only a few selections that don't look good, he takes me somewhere else.  Which I am very thankful for.  I know its not easy for him either so having his support makes everything much easier.
I hope that this gets easier and that the constant cravings for foods I cant have goes away. But for now I just have to stay strong.
